Roasted Brussel Sprouts with Pancetta and Chestnuts

“Oktoberfeast” is genius! It was recently invented by myself and 2 close friends, we decided “why should we only have Thanksgiving food once a year?” And so OKTOBERFEAST ¬†was born! Basically you pick a random Sunday in October, the girls cook “Thanksgiving” dinner and the boys watch football…

Here was our menu:

1. Turkey with Roasted Vegetables (pls note a 20lb turkey is too big for 4 people!)

2. Mashed Potatoes with Celery Root

3. Apple/Sage/Sausage Stuffing

4. Caramelized Butternut Squash

5. Mashed Sweet Potatoes with Roasted Apples

6. Roasted Brussel Sprouts with Pancetta and Chestnuts

8. Apple Pie

Many of the ingredients were actually purchased at my local farmers market

    The dinner was AMAZING!!! I had leftovers yesterday (and I’m not usually a big fan of leftovers) and it tasted even better! I didn’t think it was possible!
